  1. Step 1: Melt the Cheese - In a microwave-safe bowl, combine the 2 cups shredded mozzarella cheese. Microwave in 30-second intervals, stirring in between, until the cheese is completely melted and gooey.
  2. Step 2: Mix in the Egg Yolks - Add the 2 large egg yolks to the melted cheese. Mix well until the mixture is smooth and fully combined.
  3. Step 3: Season the Mixture - Sprinkle in a pinch of salt (and any optional seasonings you desire). Stir until everything is evenly distributed.
  4. Step 4: Form the Dough - Let the mixture cool slightly, then knead it with your hands until it forms a cohesive dough. If it is too sticky, you can dust your hands with a little almond flour.
  5. Step 5: Roll Out the Dough - Place the dough between two sheets of parchment paper. Use a rolling pin to roll it out to your desired thickness, typically about ¼ inch is perfect for pasta.
  6. Step 6: Cut the Pasta - Using a knife or pizza cutter, slice the dough into your favorite shapes—fettuccine, lasagna sheets, or even ravioli!
  7. Step 7: Cook the Pasta - Bring a large pot of salted water to a boil. Carefully drop in your cut pasta and cook for 2-3 minutes or until they float to the top. Drain and set aside.
