Instructions
- Step 1: Melt the Cheese - In a microwave-safe bowl, combine the 2 cups shredded mozzarella cheese. Microwave in 30-second intervals, stirring in between, until the cheese is completely melted and gooey.
- Step 2: Mix in the Egg Yolks - Add the 2 large egg yolks to the melted cheese. Mix well until the mixture is smooth and fully combined.
- Step 3: Season the Mixture - Sprinkle in a pinch of salt (and any optional seasonings you desire). Stir until everything is evenly distributed.
- Step 4: Form the Dough - Let the mixture cool slightly, then knead it with your hands until it forms a cohesive dough. If it is too sticky, you can dust your hands with a little almond flour.
- Step 5: Roll Out the Dough - Place the dough between two sheets of parchment paper. Use a rolling pin to roll it out to your desired thickness, typically about ¼ inch is perfect for pasta.
- Step 6: Cut the Pasta - Using a knife or pizza cutter, slice the dough into your favorite shapes—fettuccine, lasagna sheets, or even ravioli!
- Step 7: Cook the Pasta - Bring a large pot of salted water to a boil. Carefully drop in your cut pasta and cook for 2-3 minutes or until they float to the top. Drain and set aside.
Notes
- Don’t rush the melting: Ensure your cheese is fully melted for the best texture.
- Experiment with shapes: Try different pasta shapes for variety; they can change up the whole dish.
- Dress it up: Toss your pasta in homemade pesto or creamy Alfredo for an elevated dish.
