  • 1 cup Sugar-free peanut butter Ensure it has no added sugars or unhealthy oils.
  • ½ cup Collagen powder Can substitute with protein powder or whey powder.
  • cup Unsalted butter Melted.
  • cup Powdered erythritol Adjust sweetness to taste.
  • 1 teaspoon Vanilla extract
  • ¼ teaspoon Salt

Instructions

  • Step 1: Melt the unsalted butter in a saucepan over low heat. Stir occasionally until completely melted. Remove from heat and allow to cool slightly.
  • Step 2: In a mixing bowl, blend together the melted butter and sugar-free peanut butter until smooth. Add powdered erythritol, collagen powder, vanilla extract, and salt. Mix until smooth.
  • Step 3: Line an 8×8 inch baking dish with parchment paper, allowing some overhang for easy removal.
  • Step 4: Pour the peanut butter mixture into the prepared baking dish, spreading it evenly. Refrigerate for at least 2 hours or until set.
  • Step 5: Once firm, lift the fudge out using the parchment paper and cut into squares. Store in an airtight container in the fridge.

Notes

Store in an airtight container in the refrigerator for about a week. For longer storage, freeze in pieces.
