Instructions
Step 1: Melt the unsalted butter in a saucepan over low heat. Stir occasionally until completely melted. Remove from heat and allow to cool slightly.
Step 2: In a mixing bowl, blend together the melted butter and sugar-free peanut butter until smooth. Add powdered erythritol, collagen powder, vanilla extract, and salt. Mix until smooth.
Step 3: Line an 8×8 inch baking dish with parchment paper, allowing some overhang for easy removal.
Step 4: Pour the peanut butter mixture into the prepared baking dish, spreading it evenly. Refrigerate for at least 2 hours or until set.
Step 5: Once firm, lift the fudge out using the parchment paper and cut into squares. Store in an airtight container in the fridge.
