  1. Gather all your ingredients and ensure your mascarpone or cream cheese is cold.
  2. In a mixing bowl, add the mascarpone or cream cheese and the powdered sweetener. Beat until smooth and creamy.
  3. Incorporate the smooth peanut butter into the mascarpone mixture and mix until well combined.
  4. In a separate bowl, whip the cold heavy cream with the vanilla extract until stiff peaks form.
  5. Gently fold the whipped cream into the peanut butter mixture using a spatula.
  6. Taste the mousse and add more powdered sweetener if desired, folding it in gently.
  7. Spoon the mousse into serving cups and refrigerate for at least 30 minutes before serving.
  8. Garnish with crushed peanuts or sugar-free chocolate sauce if desired, then enjoy!
