  1. Step 1: Thaw the Crab - Begin by placing the frozen king crab legs in a microwave-safe bowl. Heat them on low for about 3-4 minutes, or until they are thawed but not hot. Once thawed, carefully crack the legs and remove the meat, placing it in a separate bowl. Set it aside.
  2. Step 2: Prepare the Cauliflower Rice - In a large skillet or wok, heat the cooking spray over medium-high heat. Add the diced onion and sauté for about 2-3 minutes until translucent. Toss in the minced garlic and the white parts of the scallions, cooking for an additional minute until fragrant.
  3. Step 3: Add the Cauliflower Rice - Stir in the riced cauliflower, ensuring it is well combined with the onion and garlic mixture. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.
  4. Step 4: Scramble the Eggs - Push the cauliflower mixture to one side of the skillet. On the empty side, pour in the beaten eggs. Allow them to sit for a few moments before scrambling them with a spatula until fully cooked. Once done, combine the eggs with the cauliflower mixture.
