Korean Fried Chicken Sauce

A sweet, tangy, and spicy sauce perfect for coating Korean fried chicken.

Ingredients
  

  • 1/2 cup ketchup
  • 2 stalks green onions minced
  • 4 cloves garlic minced
  • 1 lemon lemon juiced
  • 2 tablespoons honey
  • 1 tablespoon chili-garlic sauce
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon black pepper
  • 1/4 cup water
  • salt to taste

Equipment

  • Saucepan
  • Measuring cups and spoons
  • Wooden Spoon or Whisk
  • Citrus juicer or reamer

Method
 

  1. Combine the ketchup, minced green onions, minced garlic, lemon juice, honey, chili-garlic sauce, red pepper flakes, and black pepper in a medium saucepan over medium-high heat.
  2. Add the water and stir to reach your desired consistency.
  3. Bring the mixture to a simmer, then reduce heat to medium-low and cook for about 5 minutes, stirring occasionally, until the sauce thickens and flavors meld.
  4. Remove from heat, let cool to room temperature, then season with salt to taste before using.

Notes

  • Use more or less chili-garlic sauce to adjust spiciness.
  • Water adjusts consistency—add gradually.
  • Let the sauce cool before tossing with fried chicken.
