Method
 

  1. Start by gathering all your ingredients. It’s helpful to have everything within reach before you begin mixing.
  2. In a large mixing bowl, combine the unsweetened shredded coconut and vanilla protein powder. Stir well to ensure they are evenly mixed.
  3. In the same bowl, add the honey (or agave/sugar-free syrup), coconut oil, and lemon zest. Mix everything together until fully incorporated. The mixture should be sticky and hold together.
  4. Using your hands, scoop out small portions of the mixture and roll them into balls about the size of a tablespoon. Place each ball onto a cookie sheet or plate.
  5. Once all the mixture is rolled into balls, place them in the refrigerator for at least 30 minutes to set. This helps them maintain their shape and makes them easier to eat.
  6. After chilling, your Lemon Energy Balls are ready to enjoy! Store any leftovers in an airtight container in the fridge for a quick snack throughout the week.
