  • 2 large lemons
  • 4 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme

Method
 

Instructions:
  1. Step 1: Preheat your oven to 425°F (220°C). A hot oven is key to achieving that beautiful golden-brown skin.
  2. Step 2: Rinse the whole chicken under cold water and pat it dry with paper towels. Make sure to remove any giblets from the cavity if they are included.
  3. Step 3: In a mixing bowl, combine the minced garlic, olive oil, dried rosemary, dried thyme, salt, and black pepper. Squeeze the juice of one lemon into the mixture, then mix well to create a flavorful marinade.
  4. Step 4: Rub the marinade all over the chicken, making sure to cover every inch for maximum flavor. Don’t forget to get some under the skin for an extra punch.
  5. Step 5: Slice the remaining lemon into wedges. Stuff the lemon wedges into the cavity of the chicken. This will help infuse more citrus flavor as it cooks.
  6. Step 6: Place the chicken breast-side up in the roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste the chicken with the pan juices halfway through cooking for added moisture.
  7. Step 7: Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, making for a more succulent chicken. Serve with your favorite sides and enjoy!
