  • 1 large Avocado (mashed)
  • 4 Cherry tomatoes (chopped)
  • 2 tbsp Red onion (chopped)
  • 2 tbsp Feta cheese
  • 2 tbsp Shelled pistachios (chopped)
  • Sea salt to taste
  • Black pepper to taste

Method
 

  1. Begin by toasting your slices of bread until they’re golden brown and crispy. You can use a toaster or a pan over medium heat if you prefer a more rustic touch.
  2. While the bread is toasting, slice the avocado in half, remove the pit, and scoop the flesh into a mixing bowl. Mash it gently with a fork until creamy but still slightly chunky for texture.
  3. Spread 2 to 4 tablespoons of hummus onto each slice of toasted bread, depending on how much flavor you desire. The hummus serves as a perfect base layer.
  4. Next, add a generous layer of the mashed avocado on top of the hummus, spreading it evenly across the toast.
  5. Sprinkle the chopped cherry tomatoes, red onion, and feta cheese over the avocado. Finish with a sprinkle of chopped pistachios for that added crunch.
