Life-Changing Hummus Avocado Toast

  • 2 slicesbread of choice
  • 2 to 4 Tbsphummus*
  • 1 large avocadomashed
  • 4 cherry tomatoeschopped
  • 2 Tbspred onionchopped
  • 2 Tbspfeta cheese
  • 2 Tbspshelled pistachioschopped
  • Sea salt and black pepper to taste

Method
 

Instructions
  1. Chop the 4 cherry tomatoes, 2 Tbsp red onion, and 2 Tbsp shelled pistachios; set aside.
  2. In a small bowl, mash the 1 large avocado with a fork until creamy. Season with a pinch of sea salt and black pepper to taste; set aside.
  3. Toast the 2 slices of bread to your desired level of crispness.
  4. Divide the 2 to 4 Tbsp hummus between the 2 toasted slices (about 1–2 Tbsp per slice) and spread evenly over each slice.
  5. Divide the mashed avocado and spread half on each hummus-topped slice.
  6. Evenly sprinkle the chopped tomatoes, chopped red onion, chopped pistachios, and the 2 Tbsp feta cheese over the two slices.
  7. Taste and add more sea salt and black pepper if desired. Serve immediately.

*The amount of hummus used will depend on the size of the bread. For smaller slices of gluten-free bread, you will only need one tablespoon per slice.
