- Chop the 4 cherry tomatoes, 2 Tbsp red onion, and 2 Tbsp shelled pistachios; set aside.
- In a small bowl, mash the 1 large avocado with a fork until creamy. Season with a pinch of sea salt and black pepper to taste; set aside.
- Toast the 2 slices of bread to your desired level of crispness.
- Divide the 2 to 4 Tbsp hummus between the 2 toasted slices (about 1–2 Tbsp per slice) and spread evenly over each slice.
- Divide the mashed avocado and spread half on each hummus-topped slice.
- Evenly sprinkle the chopped tomatoes, chopped red onion, chopped pistachios, and the 2 Tbsp feta cheese over the two slices.
- Taste and add more sea salt and black pepper if desired. Serve immediately.
