Ingredients

  • 1 cup butter, softened
  • 1 ¾ cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 teaspoons lime juice
  • 2 teaspoons lime zest

Instructions

  • Step 1: Preheat your oven to 350°F (175°C).
  • Step 2: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Step 3: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Step 4: Beat in the egg, then mix in the vanilla extract, lime juice, and lime zest.
  • Step 5: Gradually add the dry ingredients to the wet mixture and mix until just combined.
  • Step 6: Drop rounded tablespoons of dough onto ungreased baking sheets, leaving space between each cookie.
  • Step 7: Bake for 10-12 minutes or until the edges are lightly golden.
  • Step 8: Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
