In a skillet over medium heat, melt 1 tablespoon of butter. Once melted, add the diced onions. Sauté for about 5 minutes or until the onions are soft and translucent.
Pour in the stock or broth of your choice, stirring well to combine. Increase the heat and bring the mixture to a simmer.
Once the broth is simmering, reduce the heat to low. Add the heavy cream and cream cheese, stirring continuously until the cream cheese is fully melted and incorporated.
Sprinkle in the psyllium husk while whisking constantly. This will help thicken the gravy without adding carbs. Allow it to simmer for another 3–5 minutes, stirring until you reach your desired consistency.
Add Worcestershire sauce, salt, and pepper to taste. Adjust the seasoning as necessary, and remember to taste as you go!
