Macro Friendly Broccoli Cheddar Chicken

A simple, protein-forward baked chicken topped with a creamy broccoli and cheddar mixture.

Ingredients
  

  • 1 pound chicken breasts (thinly sliced) about 4 thin cut breasts, or 2 breasts sliced thin
  • 1/3 cup plain nonfat Greek yogurt
  • 4 wedges The Laughing Cow cheese light
  • 2 oz sharp cheddar cheese grated
  • 2 cups small broccoli florets steamed
  • 1 green onion chopped
  • salt to taste
  • black pepper to taste
  • 3/4 teaspoon onion powder

Method
 

  1. Preheat the oven to 375°F (190°C). Lightly spray a 9×9-inch baking dish with cooking spray.
  2. Pat the chicken breasts dry, season both sides with salt and pepper, and arrange them in a single layer in the prepared baking dish.
  3. In a mixing bowl, stir together the Greek yogurt, Laughing Cow cheese wedges (softened), grated cheddar, steamed broccoli, chopped green onion, onion powder, and a pinch of salt and pepper until well combined.
  4. Divide the broccoli-cheese mixture evenly and spread it over the top of each chicken breast.
  5. Bake uncovered for 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through.
  6. Remove from the oven and let rest a few minutes before serving.

Notes
