Ingredients

  • 4 ea eggs (at room temperature)
  • 1 cup sugar
  • 8 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 2 cups milk (lukewarm)
  • Powdered sugar (for dusting)

Equipment

  • Mixing Bowls
  • Whisk or hand mixer
  • 9x13-inch Baking Pan
  • Rubber spatula

Method

  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. Grease your 9x13 inch baking pan with melted butter or non-stick spray.
  3. In a large mixing bowl, beat the 4 eggs and 1 cup of sugar together until thick and pale, about 5 minutes.
  4. Add 8 tablespoons of melted butter and 1 teaspoon of vanilla extract and mix well.
  5. Sift in 1 cup of flour and gently fold until just combined, being careful not to over-mix.
  6. Slowly pour in 2 cups of lukewarm milk, stirring gently until smooth. The batter will be thin.
  7. Pour the batter into the prepared pan and bake for 40-50 minutes, or until golden brown and a toothpick comes out clean.
  8. Allow the cake to cool in the pan for about 10-15 minutes before dusting with powdered sugar and slicing.

Notes

  • Reduce sugar by up to 25% without sacrificing taste.
  • Use coconut oil or plant-based butter for a dairy-free option.
  • Swap all-purpose flour for whole wheat for added fiber.
