  • 1/4 cupsugar
  • 1 egg
  • 1/2 cupraisins
  • 5 crepes
  • 1/4 cupmaple syrup
  • icing sugar for dusting, optional

Method
 

Instructions
  1. Preheat the oven to 375°F. Lightly grease a casserole dish.
  2. In a medium bowl, stir together 2 cups ricotta cheese, ¼ cup sugar, 1 egg, and ½ cup raisins until evenly combined.
  3. Divide the filling into five equal portions (one-fifth of the mixture per crepe).
  4. Lay one crepe flat, spoon one portion of filling into the center, then fold the crepe into an envelope (fold the bottom edge up over the filling, fold both sides in, then fold the top down) to enclose the filling.
  5. Place the folded crepe seam-side down in the prepared dish. Repeat with the remaining crepes and filling, arranging them in a single layer.
  6. Bake for 10 minutes, until the crepes are heated through and the filling is set.
  7. Remove from the oven and drizzle ¼ cup maple syrup evenly over the crepes.
  8. Dust with icing sugar if desired, and serve warm.
