Ingredients
  

  • 2 1/4 cups rolled oats (for gluten-free, use certified GF oats)
  • 1/2 cup sliced almonds
  • 1/4 cup sunflower seeds (without shells)
  • 1/4 cup pumpkin seeds (without shells)
  • 1/4 cup unsweetened coconut flakes
  • heaping 1/4 teaspoon cinnamon
  • 1/8 teaspoon ginger
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon salt
  • 1/4 cup grade B maple syrup
  • 1 teaspoon vanilla
  • 1/4 cup craisins (dried sweetened cranberries)
  • 1/4 cup golden raisins
  • 1/4 cup chopped pitted dates

Method
 

  1. Preheat your oven to 350°F (175°C). This step is crucial for achieving that perfectly toasted flavor.
  2. In a large mixing bowl, combine the rolled oats, sliced almonds, sunflower seeds, pumpkin seeds, coconut flakes, cinnamon, ginger, nutmeg, and salt. Stir well to mix all the dry ingredients evenly.
  3. Pour in the maple syrup and vanilla extract. Mix everything together, ensuring all the dry ingredients are coated with the sticky sweetness of the syrup.
  4. Line a baking sheet with parchment paper for easy cleanup. Pour the muesli mixture onto the prepared baking sheet and spread it out evenly.
  5. Bake the muesli in the preheated oven for about 15-20 minutes, stirring halfway through to ensure even toasting. Watch closely to prevent burning; you want that golden-brown color!
  6. Once toasted, remove the muesli from the oven and let it cool for a few minutes. After cooling, stir in the craisins, golden raisins, and chopped dates. This will add a burst of sweetness to every bite.
  7. Transfer the cooled muesli into an airtight container. It can be stored at room temperature for up to two weeks. Enjoy it as a quick breakfast or snack whenever the craving strikes!
