Ingredients

Ingredients
  • 8 rolls refrigerated dinner rolls (big/jumbo size)
  • 4 cups canola oil for frying
  • 1 cup marshmallow fluff
  • 4 oz cream cheese at room temperature
  • 1 ¼ cups powdered sugar divided
  • ½ cup bittersweet chocolate chips
  • ¼ cup milk
  • 2 sheets graham crackers coarsely crushed

Equipment

  • Frying pan or deep fryer
  • Mixing Bowls
  • Whisk
  • Piping bag or zip-top bag
  • Slotted Spoon
  • Cooling rack

Method

Instructions
  1. Begin by allowing the refrigerated dinner rolls to come to room temperature. This will make them easier to handle.
  2. Take each dinner roll and flatten it slightly with your hands. Use your fingers to form a small hole in the center of each roll to create the classic doughnut shape.
  3. In a deep pan or fryer, heat the canola oil over medium heat until it reaches 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature for frying.
  4. Carefully place the shaped doughnuts into the hot oil, being sure not to overcrowd the pan. Fry them for about 2-3 minutes on each side, or until they are golden brown. Use a slotted spoon to remove them from the oil and place them on a cooling rack to drain excess oil.
  5. In a mixing bowl, combine the marshmallow fluff and cream cheese. Mix well until smooth and creamy. Gradually add 1 cup of powdered sugar and stir until fully incorporated.
  6. Transfer the filling to a piping bag or a zip-top bag with a corner snipped off. Insert the tip into the hole of each cooled doughnut and squeeze gently to fill with the marshmallow cream mixture.
  7. In a small saucepan, combine the bittersweet chocolate chips and milk over low heat. Stir until melted and smooth. Remove from heat and let cool slightly.
  8. Dip the top of each filled doughnut into the chocolate glaze, allowing any excess to drip off.
  9. While the glaze is still wet, sprinkle the coarsely crushed graham crackers on top for that signature smores crunch.
  10. Allow the glaze to set for a few minutes before serving. Enjoy your Marshmallow Cream Filled Smores Doughnuts warm or at room temperature.

Notes

  • Monitor the oil temperature closely to avoid burning the doughnuts.
  • Ensure that the doughnuts are completely cooled before filling them to prevent the filling from melting.
  • Experiment with different toppings, such as mini marshmallows or crushed nuts, for added texture and flavor.
  • These doughnuts are best enjoyed fresh, but they can be stored for a day or two in an airtight container.
