Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the balsamic vinegar, olive oil, salt, and pepper. Whisk until well blended.
Place the chicken breasts or thighs into a large baking dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Allow it to marinate for at least 15 minutes.
Add the marinated artichoke hearts, red onion, cherry tomatoes, and white beans to the baking dish. Toss gently to coat.
Add the chicken broth around the chicken and vegetables.
Cover with aluminum foil and bake for 30 minutes. Remove the foil, sprinkle mozzarella pearls and cashews on top, and bake for another 15-20 minutes.
Once done, sprinkle with fresh oregano and serve hot.
