Mediterranean Chicken Bake Recipe (Balsamic Baked Chicken)

Ingredients
  

  • 1/2 cup balsamic vinegar rich, tangy flavor
  • 1 tablespoon olive oil good quality, for added flavor
  • 6 pieces boneless skinless chicken breasts or thighs thighs for juiciness
  • to taste Salt and pepper for seasoning
  • 1 can marinated artichoke hearts 14 oz can or jar
  • 1/2 piece red onion thinly sliced for sweetness
  • 1 pint cherry tomatoes left whole for burstiness
  • 1 can white beans 14 oz, drained and rinsed
  • 3/4 cup whole salted cashews for crunch and healthy fats
  • 1 1/2 cups chicken broth for moisture and flavor
  • 1 cup mozzarella pearls whole milk for gooeyness
  • 4 sprigs fresh oregano chopped for a fragrant finish

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the balsamic vinegar, olive oil, salt, and pepper. Whisk until well blended.
  3. Place the chicken breasts or thighs into a large baking dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Allow it to marinate for at least 15 minutes.
  4. Add the marinated artichoke hearts, red onion, cherry tomatoes, and white beans to the baking dish. Toss gently to coat.
  5. Add the chicken broth around the chicken and vegetables.
  6. Cover with aluminum foil and bake for 30 minutes. Remove the foil, sprinkle mozzarella pearls and cashews on top, and bake for another 15-20 minutes.
  7. Once done, sprinkle with fresh oregano and serve hot.

Notes

  • Adjust the marinade ingredients to taste.
  • Store leftovers in an airtight container for up to 4 days.
  • Freeze portions for up to 3 months in freezer-safe containers.
