Ingredients
  

  • 1 lb ground chicken or ground turkey
  • 1/4 cup whole wheat panko breadcrumbs
  • 1 egg
  • 1/3 cup sun-dried tomatoes, packed in oil, chopped
  • 1/4 cup feta cheese
  • 1/4 cup parmesan cheese
  • 2 cloves garlic, minced (or 1/2 teaspoon garlic powder)
  • 1/4 cup green onions, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Squeeze of lemon (optional)

Method
 

  1. Preheat your oven to 400°F (200°C). This ensures that the meatballs will cook evenly and develop a beautiful golden color.
  2. In a large mixing bowl, combine the ground chicken or turkey, whole wheat panko breadcrumbs, egg, chopped sun-dried tomatoes, feta cheese, parmesan cheese, minced garlic, green onions, fresh parsley, salt, and black pepper.
  3. Using your hands or a spatula, gently mix the ingredients together until just combined. Be careful not to overmix, as this can lead to tough meatballs.
  4. Using your hands, scoop out about 2 tablespoons of the mixture and roll it into a ball. Place the meatball on a baking sheet lined with parchment paper. Repeat this process until all the mixture is shaped into meatballs.
  5. Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the meatballs are cooked through and golden brown on the outside.
  6. Once cooked, remove the meatballs from the oven and let them cool for a few minutes. Serve with a squeeze of lemon, if desired, alongside your favorite dipping sauce or over a fresh salad.

Notes

  • For extra moisture, consider adding a tablespoon of olive oil to the mixture.
  • If the mixture feels too wet, add a bit more panko breadcrumbs to achieve the right consistency.
  • For a fun twist, try adding chopped spinach or kale into the mixture for added nutrition.
