Ingredients
  

  • 1 tablespoon olive oil
  • 1/4 cup red onion minced
  • 2 cloves garlic minced
  • 2 cups brown rice cooked
  • 2 pcs roma tomatoes diced small
  • 2 cups baby spinach fresh
  • 1/2 cup fat-free feta cheese crumbled

Method
 

  1. Begin by heating the olive oil in a large skillet or wok over medium heat. Allow the oil to warm for a minute before adding the next ingredients.
  2. Add the minced red onion to the skillet. Sauté for about 2-3 minutes, or until the onion becomes translucent. Then, add the minced garlic and cook for an additional minute, stirring frequently to prevent burning.
  3. Next, add the cooked brown rice to the skillet. Stir well to combine the rice with the sautéed onions and garlic, allowing the rice to heat through for about 3-4 minutes.
  4. Add the diced roma tomatoes and fresh baby spinach to the skillet. Stir gently as the spinach wilts and the tomatoes soften, about 2-3 minutes.
  5. Finally, sprinkle the crumbled feta cheese over the rice mixture. Stir until evenly distributed and allow it to warm for another minute.
  6. Once everything is well combined and heated through, remove the skillet from heat. Serve your Mediterranean Fried Rice warm, garnished with extra feta or a drizzle of olive oil if desired.

Notes

  • Use leftover rice or cold rice for the best texture; freshly cooked rice can become mushy.
  • Add protein such as grilled chicken or chickpeas to make the dish heartier.
  • For a bit of heat, add red pepper flakes when sautéing the onions.
