  • 13 ounces cooked chicken, diced Use rotisserie chicken for ease.
  • 1 cup salsa Choose your favorite mild or spicy variety.
  • 4 ounces light cream cheese, softened
  • 4 ounces canned diced green chiles
  • 15 ounces black beans, drained and rinsed
  • 1 medium tomato, diced
  • 2 stalks green onions, sliced Plus more for garnish.
  • 2 cups Mexican cheese blend, shredded
  • 1 cup tortilla chips, crushed
  • Sour cream for garnish

Instructions

  • Step 1: Preheat the oven to 350°F (175°C).
  • Step 2: Gather all your ingredients and dice the cooked chicken, tomato, and slice the green onions. Crush tortilla chips if using whole.
  • Step 3: In a large mixing bowl, combine the cooked chicken, salsa, softened cream cheese, diced green chiles, black beans, diced tomato, and sliced green onions. Stir until well incorporated.
  • Step 4: In a greased 9×13-inch baking dish, spread half of the chicken mixture evenly on the bottom. Sprinkle 1 cup of shredded Mexican cheese blend over the mixture. Add another layer of the remaining chicken mixture and finish with the rest of the cheese.
  • Step 5: Sprinkle the crushed tortilla chips over the top of the casserole.
  • Step 6: Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  • Step 7: Garnish with dollops of sour cream and extra sliced green onions before serving.

Notes

Try using leftover grilled chicken for quicker prep. Make sure the cream cheese is softened for a smooth texture.
