Instructions
- Preheat oven to 350°F. Spray a 9×13-inch baking dish with nonstick cooking spray and set aside.
- In a large bowl, stir together 1 (10.5-oz) can Unsalted Cream of Chicken Soup, 1 (16-oz) container sour cream, and 2¾ cups chicken stock until smooth.
- Add 4 cups cooked chopped chicken, 1 (16-oz) package uncooked orzo pasta, 1 cup frozen corn kernels, 1 (15-oz) can black beans (drained and rinsed), 1 (10-oz) can Rotel diced tomatoes and green chilies (drained), 1 (1-oz) package taco seasoning, and 2 cups shredded cheddar cheese. Stir until all ingredients are evenly combined.
- Pour the mixture into the prepared 9×13-inch baking dish and spread into an even layer. Sprinkle the remaining 1 cup shredded cheddar cheese evenly over the top. Cover the dish tightly with aluminum foil.
- Bake in the preheated oven for 25 minutes. Remove the foil and bake an additional 10–15 minutes, until the cheese is melted, the casserole is bubbly, and the orzo is tender.
- Remove from the oven and let rest about 5 minutes before serving to allow the casserole to set.
