Ingredients
  

For the Pizza:
  • 8 tortillas Taco-sized Flour or Corn Tortillas
  • 1 tablespoon Avocado Oil for frying
  • 1 cup Enchilada Sauce homemade or store-bought
  • 1 can Green Chilies drained
  • 1 can Canned Tomatoes diced
  • 1 pound Ground Beef seasoned with taco spices
  • 1 packet Taco Seasoning homemade or pre-packaged
  • 1 cup Tomato Juice for flavor
  • 1 can Refried Beans
  • 2 tablespoons Milk or Water to adjust bean consistency
  • 2 cups Mexican Cheese Blend shredded
  • 1 cup Fresh Tomatoes diced, for topping
  • 1 bunch Green Onions optional garnish
  • 1 cup Black Olives sliced, optional
  • 1 cup Sour Cream optional topping
  • 1 cup Taco Sauce or Salsa optional for serving

Method
 

Instructions:
  1. Step 1: Prepare the Ingredients. Start by gathering all your ingredients. If you're using homemade enchilada sauce, prepare that first. Dice the tomatoes and drain the green chilies. Set everything aside for easy access during cooking.
  2. Step 2: Cook the Ground Beef. In a frying pan over medium heat, add the ground beef. Cook until browned, breaking it up with a spatula. Drain any excess fat. Season the beef with taco seasoning and stir in the tomato juice. Let it simmer for about 5 minutes until the flavors meld together.
  3. Step 3: Fry the Tortillas. In a separate frying pan, heat the avocado oil over medium heat. Fry each tortilla for about 30 seconds on each side until they are golden and crispy. Place them on paper towels to drain excess oil.
  4. Step 4: Assemble the Pizza. On a crispy tortilla, spread a layer of refried beans mixed with a little milk or water to loosen it up. Next, add a layer of the seasoned beef followed by a drizzle of enchilada sauce. Sprinkle a generous amount of shredded cheese on top.
  5. Step 5: Bake the Pizza. Preheat your oven to 350°F (175°C). Place the assembled pizzas on a baking sheet and bake for about 10 minutes, or until the cheese is melted and bubbly.
