Instructions
Step 1: Grill or roast the corn until cooked, then cut the kernels off the cob.
Step 2: In a mixing bowl, combine softened cream cheese and mayonnaise until smooth.
Step 3: Add cayenne pepper, cotija cheese, and cilantro to the mixture and stir until combined.
Step 4: Gently fold in the corn kernels into the creamy mixture.

Notes
For a smoky flavor, grill the corn. Adjust cayenne pepper to your heat preference. Can use frozen corn if fresh is unavailable.
