  • 4 ounces Cotija Cheese Crumbled, can substitute with feta.
  • 0.5 cup Cilantro Chopped, plus more for garnish.

Instructions

  • Step 1: Grill or roast the corn until cooked, then cut the kernels off the cob.
  • Step 2: In a mixing bowl, combine softened cream cheese and mayonnaise until smooth.
  • Step 3: Add cayenne pepper, cotija cheese, and cilantro to the mixture and stir until combined.
  • Step 4: Gently fold in the corn kernels into the creamy mixture.
  • Step 5: Transfer to a serving bowl, cover, and chill for 30 minutes. Garnish with cilantro and serve with lime wedges.

Notes

For a smoky flavor, grill the corn. Adjust cayenne pepper to your heat preference. Can use frozen corn if fresh is unavailable.
