Microwave Quinoa

Ingredients
  

  • 1 cup quinoa rinsed under cold water
  • 2 cups water
  • 1 pinch salt
  • 1 tablespoon coconut oil optional, for added richness

  • Microwave-safe Bowl
  • Measuring Cups
  • Fork
  • Kitchen towel or lid

Method
 

  1. Place 1 cup of quinoa in a fine mesh strainer and rinse it under cold water for about 30 seconds.
  2. In a microwave-safe bowl, combine the rinsed quinoa, 2 cups of water, and a pinch of salt. Add coconut oil if using.
  3. Cover the bowl with a kitchen towel or a microwave-safe lid.
  4. Place the bowl in the microwave and cook on high for 6 minutes. Let it sit for an additional 2-3 minutes without removing the cover.
  5. Carefully remove the bowl and fluff the quinoa gently with a fork.

Notes

  • Store cooked quinoa in an airtight container for up to 5 days in the refrigerator.
  • Quinoa can be frozen for up to 3 months; just reheat when ready.
  • Experiment with adding different herbs or spices for flavor variations.
