- Place 1 cup of quinoa in a fine mesh strainer and rinse it under cold water for about 30 seconds.
- In a microwave-safe bowl, combine the rinsed quinoa, 2 cups of water, and a pinch of salt. Add coconut oil if using.
- Cover the bowl with a kitchen towel or a microwave-safe lid.
- Place the bowl in the microwave and cook on high for 6 minutes. Let it sit for an additional 2-3 minutes without removing the cover.
- Carefully remove the bowl and fluff the quinoa gently with a fork.
Notes
- Store cooked quinoa in an airtight container for up to 5 days in the refrigerator.
- Quinoa can be frozen for up to 3 months; just reheat when ready.
