  • 1/4 cup granulated sugar
  • 2 large eggs at room temperature
  • 2 teaspoons vanilla extract
  • 1/4 cup milk at room temperature
  • 1/4 cup honey
  • 1 and 1/2 cups mashed very ripe bananas

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C). This ensures that your bread bakes evenly.
  2. Step 2: Grease your 9x5 inch loaf pan with a little oil or butter, or line it with parchment paper for easy removal.
  3. Step 3: In a large mixing bowl, whisk together the all-purpose flour, baking soda, salt, nutmeg, and cinnamon. Set aside.
  4. Step 4: In another bowl, combine the melted butter, canola oil, brown sugar, and granulated sugar. Whisk until well blended. Add the eggs, vanilla extract, milk, honey, and mashed bananas. Mix until smooth.
  5. Step 5: Gradually add the dry mixture to the wet mixture, stirring gently with a spatula until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  6. Step 6: Pour the batter into your prepared loaf pan, smoothing the top with the spatula.
  7. Step 7: Bake in the preheated oven for about 60-70 minutes or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, you can cover it loosely with aluminum foil.
