Instructions
Step 1: Preheat your oven to 350°F (175°C).
Step 2: In a medium skillet, heat the olive oil over medium heat. Add the diced yellow onions and sauté until translucent, about 4-5 minutes.
Step 3: In a mixing bowl, combine the sautéed onions, refried beans, Easy Blender Salsa, and 1 cup of shredded Mexican blend cheese. Stir until well combined.
Step 4: Lightly grease a mini muffin tin and press a wonton wrapper into each cup to form a small cup shape.
Step 5: Fill each wonton cup with 1-2 tablespoons of the bean filling mixture and top with remaining shredded cheese.
