  • 1 tablespoon Olive oil
  • 0.5 cup Yellow onion, peeled and diced
  • 16 ounces Canned refried beans
  • 0.5 cup Easy Blender Salsa Plus more for garnish
  • 1.5 cups Mexican blend cheese, shredded Divided
  • 18 pieces Wonton wrappers
  • Sour cream For serving
  • Tomato, diced For garnish
  • Avocado, diced For garnish

Instructions

  • Step 1: Preheat your oven to 350°F (175°C).
  • Step 2: In a medium skillet, heat the olive oil over medium heat. Add the diced yellow onions and sauté until translucent, about 4-5 minutes.
  • Step 3: In a mixing bowl, combine the sautéed onions, refried beans, Easy Blender Salsa, and 1 cup of shredded Mexican blend cheese. Stir until well combined.
  • Step 4: Lightly grease a mini muffin tin and press a wonton wrapper into each cup to form a small cup shape.
  • Step 5: Fill each wonton cup with 1-2 tablespoons of the bean filling mixture and top with remaining shredded cheese.
  • Step 6: Bake for 12-15 minutes until the wonton edges are golden brown and the cheese is melted.
  • Step 7: Let cool slightly, then top each cup with sour cream, diced tomatoes, and diced avocado before serving.

Notes

For extra crispy cups, consider baking the wonton wrappers for a few minutes before adding the filling.
