Ingredients
  

  • 2 large eggs
  • 1 cup milk unsweetened vanilla almond milk
  • 1 cup all-purpose flour
  • ½ cup granulated sugar for batter
  • 2 tablespoons unsalted butter melted
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 pinch salt optional
  • ½ cup unsalted butter melted for topping
  • ½ cup granulated sugar for cinnamon sugar coating
  • 1 teaspoon cinnamon for coating

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Grease your mini muffin tin with melted butter or non-stick spray.
  3. In a mixing bowl, whisk together the eggs and milk until well combined.
  4. Add in the melted butter, vanilla extract, and a pinch of salt. Mix until fully incorporated.
  5. Sift the flour and granulated sugar into the wet mixture. Gently fold the dry ingredients into the wet.
  6. Pour the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
  7. Bake for 15-18 minutes, or until puffed and golden brown. Do not open the oven door during baking.
  8. While the popovers are baking, mix the melted butter, granulated sugar, and cinnamon in a small bowl.
  9. Once baked, let the popovers cool for a couple of minutes, then dip each into the cinnamon sugar mixture.
  10. Transfer to a serving plate and enjoy warm!
