  • 1 tablespoon Olive oil For sautéing
  • 1 medium Yellow onion, diced
  • 1 clove Garlic, minced
  • 20 ounces Frozen chopped spinach, thawed and squeezed dry
  • 1 teaspoon Salt
  • ½ teaspoon Pepper
  • teaspoon Ground nutmeg
  • ½ cup Feta cheese, crumbled
  • 1 batch Mamaw’s Rolls dough See note for recipe

Instructions

  • Step 1: Heat olive oil in a skillet over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another minute.
  • Step 2: Add thawed spinach to the skillet. Mix well with onions and garlic. Sprinkle in salt, pepper, and nutmeg. Cook for 2-3 minutes.
  • Step 3: Remove from heat and fold in crumbled feta cheese. Allow to cool slightly.
  • Step 4: Prepare Mamaw’s Rolls dough. Roll out on a floured surface to ¼ inch thick. Cut out 4-inch circles.
  • Step 5: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. Place a tablespoon of filling in the center of each dough circle. Fold and seal edges.
  • Step 6: Arrange pies on the baking sheet. Brush tops with olive oil if desired. Bake for 20-25 minutes until golden brown.

Notes

Make sure to squeeze out excess moisture from the spinach. Serve warm with yogurt or tzatziki.
