Equipment

  • Baking Pan
  • Mixing Bowls
  • Whisk
  • Spatula
  • Measuring cups and spoons
  • Double boiler or microwave-safe bowl

Method

Step-by-Step Instructions:
  1. Step 1: Preheat the Oven - Preheat your oven to 350°F (175°C). Grease your 9x9 inch baking pan or line it with parchment paper for easy removal later.
  2. Step 2: Melt the Chocolate - In a double boiler or microwave-safe bowl, melt the unsalted butter (12 tablespoons) and the unsweetened baker's chocolate (3 ounces) together. Stir until smooth and set aside to cool slightly.
  3. Step 3: Mix the Eggs and Sugar - In a large mixing bowl, whisk together the large eggs (3) and granulated sugar (1 cup) until well combined and slightly frothy.
  4. Step 4: Add the Chocolate Mixture - Once the chocolate mixture has cooled a bit, stir in the melted chocolate and butter into the egg and sugar mixture. Add the pure vanilla extract (1 teaspoon) and mix until smooth.
  5. Step 5: Combine the Dry Ingredients - In a separate bowl, whisk together the whole wheat pastry flour (1/2 cup) and all-purpose flour (1/2 cup). Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  6. Step 6: Bake the Brownies - Pour the brownie batter into the prepared baking pan and smooth the top with a spatula. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  7. Step 7: Prepare the Mint Frosting - In a mixing bowl, beat together the softened unsalted butter (3 tablespoons) and powdered sugar (1 cup) until creamy. Add the milk (1 tablespoon), pure peppermint extract (1/4 teaspoon), and green food coloring (2 drops) if using.
  8. Step 8: Frost the Brownies - Once the brownies are completely cooled, spread the mint frosting evenly over the top using a spatula.
  9. Step 9: Make the Chocolate Drizzle - In a small bowl, melt the unsweetened chocolate (1 ounce) with the unsalted butter (1 tablespoon) until smooth. Drizzle over the frosted brownies.
  10. Step 10: Cut and Serve - Allow the chocolate drizzle to set slightly before cutting the brownies into squares. Serve and enjoy!
