Instructions
Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan or line it with parchment paper.
In a mixing bowl, combine the melted butter and semisweet chocolate chips. Stir until smooth.
Add cocoa powder, granulated sugar, brown sugar, vanilla extract, and salt. Mix well.
Add eggs one at a time, mixing well after each addition.
Sift in the all-purpose flour and gently fold it into the mixture.
In a saucepan over low heat, combine chocolate chips and sweetened condensed milk. Stir until melted and smooth. Mix in mint extract and food coloring if desired.
Pour half of the brownie batter into the prepared pan. Spread the mint fudge filling over it, then top with remaining brownie batter.
Bake for 30 to 35 minutes, or until a toothpick comes out with a few moist crumbs.
Let cool for at least 15 minutes before lifting out and cooling completely on a wire rack.
