Ingredients
  

  • 3/4 cup uncooked rice
  • 12 ounces fresh green beans
  • 2 large chicken breasts cut into bite-size pieces
  • 3 tablespoons cornstarch for crispy coating
  • 1 tablespoon olive oil for sautéing
  • 1/2 cup packed brown sugar
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1 tablespoon soy sauce
  • 1 teaspoon sriracha sauce optional
  • 1 cup water
  • to taste scallions chopped

Method
 

  1. Step 1: Prepare the Rice. Begin by cooking the rice according to package instructions. If using a rice cooker, simply add the rice and water and let it do the work. Fluff it with a fork once it's done.
  2. Step 2: Coat the Chicken. In a mixing bowl, toss the bite-sized chicken pieces with cornstarch until evenly coated. This will give the chicken a crispy texture when cooked.
  3. Step 3: Cook the Chicken. Heat olive oil in a large skillet or wok over medium-high heat. Add the cornstarch-coated chicken pieces and sauté for about 5-7 minutes, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. Step 4: Sauté the Green Beans. In the same skillet, add the fresh green beans and cook for about 3-4 minutes until they are tender but still crisp.
  5. Step 5: Prepare the Sauce. In a small bowl, whisk together the brown sugar, minced garlic, grated ginger, soy sauce, sriracha, and water. Pour this mixture into the skillet with the cooked green beans.
  6. Step 6: Combine Everything. Return the cooked chicken to the skillet, stirring to coat the chicken and green beans in the sauce. Allow it to simmer for an additional 3-4 minutes until the sauce thickens slightly.
  7. Step 7: Assemble the Bowls. In meal prep containers, add a generous scoop of rice, followed by the chicken and green bean mixture. Top with chopped scallions for an extra burst of flavor.

Notes

  • Cool completely before sealing the bowls for freshness.
  • Store in airtight containers for up to 4 days in the refrigerator.
  • Reheat in the microwave for 1-2 minutes, stirring halfway through.
