Ingredients

Chicken

  • 4 pieces boneless skinless chicken breasts

Cooking Oil

  • 2 tablespoons olive oil

Sauces

  • 0.25 cup barbeque sauce

Bacon

  • 0.25 cup cooked and crumbled bacon

Cheese

  • 1 cup shredded Cheddar and Monterey Jack cheese

Vegetables

  • 14 ounces canned diced tomatoes, drained
  • 4 ounces canned diced green chiles

Garnish

  • sliced green onions for garnish

Seasoning

  • Salt to taste
  • Pepper to taste

Instructions

  • Step 1: Preheat your oven to 375°F (190°C).
  • Step 2: Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.
  • Step 3: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for about 5 minutes on each side until golden brown.
  • Step 4: Drizzle barbeque sauce over the chicken, then layer with diced tomatoes, crumbled bacon, and cheese.
  • Step 5: Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is cooked through and the cheese is melted.
  • Step 6: Let the chicken rest for a few minutes, then garnish with sliced green onions and serve hot.

Notes

For added flavor, marinate the chicken beforehand. Use homemade barbeque sauce for a special touch.
