  • 1 tablespoon pine nuts These add a lovely crunch and nutty flavor.
  • 1 tablespoon chopped fresh mint Brightens up the dish with a fresh finish.

Method
 

  1. Begin by preheating your oven to 400°F (200°C) for roasting the carrots.
  2. Wash and peel the chunky carrots. Cut them into thick, uniform sticks or rounds.
  3. In a mixing bowl, add the sliced carrots, olive oil, and Moroccan spice blend. Toss until well coated.
  4. Spread the coated carrots in a single layer on a baking sheet. Roast for about 25-30 minutes, stirring halfway through.
  5. Once done, sprinkle the toasted pine nuts and chopped fresh mint over the top.
  6. Transfer the carrots to a serving dish and enjoy them warm.
