Begin by preheating your oven to 400°F (200°C) for roasting the carrots.
Wash and peel the chunky carrots. Cut them into thick, uniform sticks or rounds.
In a mixing bowl, add the sliced carrots, olive oil, and Moroccan spice blend. Toss until well coated.
Spread the coated carrots in a single layer on a baking sheet. Roast for about 25-30 minutes, stirring halfway through.
Once done, sprinkle the toasted pine nuts and chopped fresh mint over the top.
Transfer the carrots to a serving dish and enjoy them warm.
