Ingredients
  

  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1.5 cups flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 18 ounces cream cheese (softened)
  • 2/3 cup powdered sugar
  • 1 tablespoon instant vanilla pudding powder
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy removal and cleanup.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add in the egg and vanilla, mixing until well combined.
  3. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the butter mixture, stirring until just combined.
  4. Transfer the cookie dough onto the prepared baking sheet. Press it out into a large circle, about ½ inch thick.
  5. Bake the crust in the preheated oven for 12-15 minutes, or until it is lightly golden. Allow it to cool completely on the baking sheet.
  6. While the crust is cooling, prepare the cream cheese layer. In a mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar, instant vanilla pudding powder, and vanilla extract, mixing until creamy and well blended.
  7. Once the crust has cooled, spread the cream cheese mixture evenly over the top. Get creative with your fruit toppings!
  8. Slice your favorite fruits such as strawberries, kiwi, blueberries, and bananas. Arrange them beautifully over the cream cheese layer.
