Preheat your oven according to the instructions on the frozen fries package. Spread the fries out in a single layer on a baking sheet. Bake until golden and crispy, usually around 20-25 minutes, flipping halfway through for even cooking.
In a skillet, melt the butter over medium heat. Once melted, sprinkle in the cornstarch and stir to combine. Gradually whisk in the heavy whipping cream, ensuring there are no lumps. Continue whisking until the mixture begins to thicken.
Remove the skillet from the heat and stir in the freshly grated sharp cheddar cheese until it’s fully melted and creamy. Add the taco seasoning and optional cayenne pepper, stirring until well combined.
In another skillet, heat the cooked taco meat over medium heat until warm. If desired, you can add additional taco seasoning to enhance the flavor.
Once the fries are done baking, remove them from the oven and transfer them to a serving platter. Pour the cheese sauce generously over the fries, followed by dollops of taco meat.
Top your Nacho Fries with salsa, jalapenos, guacamole, sour cream, and fresh cilantro. Serve immediately while everything is warm and melty.
