Ingredients
  

  • 1/2 cup creamy peanut butter A smooth texture works best for easy mixing.
  • 1/3 cup honey Acts as a natural sweetener and binds the ingredients together.
  • 1 tsp vanilla extract Adds a lovely flavor that complements the peanut butter.
  • 1 cup old-fashioned oats (raw) Provides a hearty base and texture.
  • 2/3 cup toasted, sweetened shredded coconut Adds a touch of sweetness and a delightful chew.
  • 1/2 cup ground golden flaxseed meal (I used Bob's Red Mill) Offers omega-3 fatty acids and fiber.
  • 6 Tbsp chocolate chips For a touch of indulgence, mini chocolate chips work wonderfully!

Method
 

  1. Gather all your ingredients to make the process smoother and quicker.
  2. In a large mixing bowl, combine the creamy peanut butter, honey, and vanilla extract. Mix until well combined and smooth.
  3. Add the old-fashioned oats, toasted shredded coconut, ground golden flaxseed meal, and chocolate chips to the bowl. Stir until evenly mixed.
  4. With clean hands, roll small portions of the mixture into balls, about 1 inch in diameter, and place them on a baking sheet or plate lined with parchment paper.
  5. Refrigerate the energy bites for at least 30 minutes to firm them up.
  6. Once chilled, enjoy your No Bake Energy Bites! Store in an airtight container in the refrigerator.
