In a large bowl, combine cooked quinoa, rolled oats, shredded coconut, raisins (or dried cranberries), and sunflower seeds.
Add peanut butter, maple syrup, vanilla, cinnamon, and a pinch of sea salt to the dry mix.
Stir well by hand (or pulse briefly in a food processor) until the mixture sticks together and is evenly combined.
Use your hands to roll the mixture into balls about the size of a golf ball and place them on a baking sheet or small pan.
Chill the energy balls in the freezer or refrigerator for about 2 hours, until firm.
