Method
 

  1. 1. Preheat the Oven: Start by preheating your oven to 350°F (175°C). This ensures that your muffins bake evenly.
  2. 2. Prepare the Muffin Tin: Line a muffin tin with paper liners or lightly grease it with coconut oil to prevent sticking.
  3. 3. Mix the Dry Ingredients: In a large mixing bowl, whisk together the oat flour, baking powder, baking soda, salt, and sugar (or sugar substitute) until well combined.
  4. 4. Combine the Wet Ingredients: In another bowl, mix the melted coconut oil, Greek yogurt, eggs, and vanilla extract. Stir until the mixture is smooth and well combined.
  5. 5. Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold them together with a rubber spatula until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  6. 6. Add Chocolate (Optional): If you’re adding chocolate, fold in the chopped pieces at this stage for a delightful surprise in every bite.
