Instructions
Step 1: Preheat your oven to 350°F (175°C).
Step 2: Line a baking sheet with parchment paper.
Step 3: In a medium bowl, whisk together the all-purpose flour, ground cinnamon, baking soda, and salt.
Step 4: In a large mixing bowl, beat the unsalted butter, light brown sugar, and granulated sugar together until fluffy.
Step 5: Add in the eggs and vanilla extract, mixing until well combined.
Step 6: Gradually add the dry ingredient mixture to the wet ingredients, mixing just until combined.
Step 7: Gently fold in the old-fashioned rolled oats until evenly distributed.
Step 8: Using a cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Step 9: Bake for about 10-12 minutes, or until edges are lightly golden.
Step 10: Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For extra chevinegarss, slightly underbake the cookies. Store leftovers in an airtight container for up to 5 days.
