Ingredients

Dry Ingredients

  • 1.5 cups All-purpose flour
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Salt

Wet Ingredients

  • 1 cup Unsalted butter, at room temperature
  • 1 cup Light brown sugar, packed
  • 0.25 cup Granulated sugar
  • 2 large Eggs, at room temperature
  • 1 teaspoon Vanilla extract

Oats

  • 2.5 cups Old-fashioned rolled oats

Instructions

  • Step 1: Preheat your oven to 350°F (175°C).
  • Step 2: Line a baking sheet with parchment paper.
  • Step 3: In a medium bowl, whisk together the all-purpose flour, ground cinnamon, baking soda, and salt.
  • Step 4: In a large mixing bowl, beat the unsalted butter, light brown sugar, and granulated sugar together until fluffy.
  • Step 5: Add in the eggs and vanilla extract, mixing until well combined.
  • Step 6: Gradually add the dry ingredient mixture to the wet ingredients, mixing just until combined.
  • Step 7: Gently fold in the old-fashioned rolled oats until evenly distributed.
  • Step 8: Using a cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Step 9: Bake for about 10-12 minutes, or until edges are lightly golden.
  • Step 10: Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For extra chevinegarss, slightly underbake the cookies. Store leftovers in an airtight container for up to 5 days.
