Mix in the peanut butter and vanilla extract until well combined.
Add the egg and mix until fully incorporated.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet ingredients, stirring until just combined.
Fold in the oats and chips gently.
Drop rounded balls of dough onto a lined baking sheet, leaving space between each cookie. Bake for 10-12 minutes.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack.
