Ingredients
  

  • 1/2 cup butter softened
  • 1/2 cup white sugar
  • 1/3 cup packed brown sugar
  • 1/2 cup peanut butter
  • 1/2 teaspoon vanilla extract (or vanilla paste)
  • 1 large egg
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
  • 1 cup peanut butter and chocolate swirl chips (or your favorite chocolate chip)

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat together the butter, white sugar, and brown sugar using an electric mixer until light and fluffy.
  3. Mix in the peanut butter and vanilla extract until well combined.
  4. Add the egg and mix until fully incorporated.
  5. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet ingredients, stirring until just combined.
  6. Fold in the oats and chips gently.
  7. Drop rounded balls of dough onto a lined baking sheet, leaving space between each cookie. Bake for 10-12 minutes.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack.

Notes

  • Use room temperature butter for easier mixing.
  • Don’t overmix the dough after adding flour.
  • Chill the dough for 30 minutes for chewier cookies.
