Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the melted butter, brown sugar, granulated sugar, and vanilla extract until smooth.
  3. Add the egg yolk (or whole egg) to the mixture and stir until well combined.
  4. Sprinkle the flour, baking soda, and salt into the wet mixture. Stir until just combined.
  5. Fold in the semi-sweet chocolate chips (and chopped baking caramels if using).
  6. Scoop the dough onto a baking sheet lined with parchment paper, shaping it into a cookie form, about 1/2 inch thick.
  7. Bake for 10-12 minutes, or until edges are golden brown and center is slightly soft.
  8. Allow the cookie to cool for a few minutes before transferring to a wire rack. Sprinkle with sea salt before enjoying.
