Ingredients
  

  • 10 6-inch Old El Paso soft taco flour tortillas
  • 2 cups shredded rotisserie chicken
  • 1 16 ounce jar salsa verde
  • 1 cup black beans rinsed and drained
  • 1 cup corn fresh, grilled, frozen, or canned
  • 3 cups shredded Mexican blend cheese
  • 1/4 cup sliced green onions

Method
 

  1. Preheat your oven to 375°F (190°C) to ensure even cooking.
  2. Spread a thin layer of salsa verde on the bottom of the skillet.
  3. Place 5 tortillas in the skillet, slightly overlapping them.
  4. In a bowl, combine chicken, remaining salsa verde, black beans, and corn. Mix and spoon over tortillas.
  5. Top with remaining 5 tortillas, slightly overlapping.
  6. Sprinkle shredded cheese generously on top.
  7. Bake for 25-30 minutes until cheese is bubbly and golden brown.
  8. Allow to cool slightly, garnish with green onions, and serve.

Notes

  • Rinse and drain black beans to reduce sodium.
  • Use thawed corn if frozen, ensuring it's drained.
  • Mix in other veggies like bell peppers for added nutrition.
