One Pot Alfredo Pasta

  • 2 cups Milk
  • 1.5 cups Low-Sodium Chicken Broth or vegetable broth
  • 3 tbsp Butter
  • 1 clove Garlic, minced or 2 smaller cloves
  • 8 ounces Fettuccine or pasta of your choice
  • 0.5 cup Heavy Cream
  • 0.75 cup Parmesan Cheese, freshly grated plus more for garnish
  • Salt & Pepper to taste
  • Fresh Parsley, finely chopped for garnish

Instructions

  • Step 1: In a large pot or skillet, melt the 3 tablespoons of butter over medium heat. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant, ensuring not to let it burn.
  • Step 2: Add the 2 cups of milk and 1 ½ cups of low-sodium chicken broth (or vegetable broth) to the pot. Stir well to combine, bringing the mixture to a gentle simmer.
  • Step 3: Once the liquid is simmering, add the 8 ounces of fettuccine (or your pasta of choice) to the pot. Stir occasionally to prevent the pasta from sticking together. Cook according to package instructions, usually about 9-12 minutes, until the pasta is al dente and has absorbed much of the liquid.
  • Step 4: After the pasta has cooked, reduce the heat to low and stir in the ½ cup of heavy cream along with ¾ cup of freshly grated Parmesan cheese. Mix until the cheese has melted and the sauce is silky smooth. Season with salt and pepper to taste.
  • Step 5: Remove the pot from heat. Serve your One Pot Alfredo Pasta topped with additional freshly grated Parmesan cheese and a sprinkle of finely chopped fresh parsley for a pop of color and flavor. Enjoy immediately!

Notes

For the best flavor, use freshly grated Parmesan cheese instead of pre-grated. Fresh cheese melts better and provides a smoother sauce. If you prefer a thicker sauce, let the pasta sit for a few minutes after cooking to absorb any remaining liquid.
