Ingredients
  

  • 1 pound beef steak cut into bite-sized pieces
  • 1 pound baby potatoes halved
  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil

Method
 

  1. Begin by rinsing your baby potatoes and slicing them in half. Pat dry the steak pieces with paper towels to ensure a good sear, then season them generously with salt, black pepper, and paprika. Mince the garlic finely and chop the parsley for garnish.
  2. Heat 1 tablespoon of olive oil in your skillet over medium heat. Add the halved baby potatoes cut-side down and allow them to cook undisturbed for about 10 minutes, or until they develop a golden crust. Stir occasionally after the initial sear to ensure even cooking. Once crisp and tender, transfer the potatoes to a plate and set aside.
  3. In the same skillet, add the remaining olive oil and increase the heat to medium-high. Add the steak bites in a single layer, making sure not to overcrowd the pan. Sear the steak for about 2-3 minutes per side until they develop a beautiful brown crust but remain juicy inside. Remove the steak bites from the pan and set aside with the potatoes.
  4. Lower the heat to medium and add the butter to the skillet. Once melted, stir in the minced garlic and cook for about 1 minute until fragrant, taking care not to burn the garlic.
  5. Return the steak bites and potatoes to the skillet. Toss everything gently in the garlic butter sauce to coat evenly. Let it cook together for another 2-3 minutes so the flavors meld. Finally, sprinkle the chopped parsley over the top for a fresh burst of color and flavor.

  • Do not overcrowd the pan when searing steak bites to ensure a proper crust.
  • Dry the steak pieces thoroughly before cooking to achieve a good sear.
