  • 8 ozfrozen whipped topping thawed
  • 3 ozpackage orange gelatin mix just the powder
  • 16 ozof 4% fat cottage cheese small or large curd will work
  • 14 ozcan mandarin oranges drained
  • 1 cupmini marshmallows

  • spoon or electric mixer
  • Refrigerator
  • Paper Towels

Method
 

Instructions
  1. Ensure the 8 oz frozen whipped topping is fully thawed, then place it in a large mixing bowl.
  2. Sprinkle the 3 oz package of orange gelatin powder (dry) over the thawed whipped topping and stir or beat on low until the powder is fully incorporated and the mixture is evenly colored.
  3. Add the 16 oz cottage cheese to the bowl and gently fold it into the whipped topping–gelatin mixture until evenly combined.
  4. Drain the 14 oz can of mandarin oranges well (pat dry with paper towels if needed), add the mandarins and 1 cup mini marshmallows to the bowl, and gently fold until the fruit and marshmallows are evenly distributed.
  5. Cover and chill in the refrigerator for at least 1 hour to allow flavors to blend, or serve immediately if desired.
