Ingredients
  

  • 1.5 cups unsweetened plain oat milk or your favorite milk; almond milk works well too
  • 1 large egg
  • 0.25 cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 2 cups berries fresh or frozen; blueberries, strawberries (diced), raspberries, blackberries, and/or marionberries
  • 0.5 cup assorted fresh berries
  • 2 tablespoons powdered sugar for dusting, optional
  • Cream or half and half, or additional milk (poured over individual servings, if desired)

Method
 

The Method for Overnight Berry Baked Oatmeal
  1. In a large mixing bowl, combine the oat milk, egg, maple syrup, and vanilla extract. Whisk until well blended and the egg is fully incorporated.
  2. Next, add the rolled oats and baking powder to the wet mixture. Stir until all the oats are evenly coated.
  3. Gently fold in the berries—both the 2 cups of your chosen berries (fresh or frozen) and the additional 1/2 cup of assorted fresh berries. Be careful not to smash the berries; you want to keep them intact for a lovely texture.
  4. Pour the oatmeal mixture into a greased baking dish, spreading it evenly. Cover with plastic wrap or a lid, and place it in the refrigerator overnight.
  5. Preheat your oven to 350°F (175°C). Remove the oatmeal from the refrigerator and let it sit at room temperature for about 10 minutes. Bake for 30-35 minutes or until the top is golden brown and the oatmeal is set.
  6. Once baked, let it cool slightly before dusting with powdered sugar if desired. Serve warm, with a drizzle of cream, half and half, or additional milk poured over individual servings for added creaminess.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • Reheat individual servings in the microwave or oven until warmed through.
  • For longer storage, freeze portions in freezer-safe containers for up to three months.
