The Method for Overnight Berry Baked Oatmeal
- In a large mixing bowl, combine the oat milk, egg, maple syrup, and vanilla extract. Whisk until well blended and the egg is fully incorporated.
- Next, add the rolled oats and baking powder to the wet mixture. Stir until all the oats are evenly coated.
- Gently fold in the berries—both the 2 cups of your chosen berries (fresh or frozen) and the additional 1/2 cup of assorted fresh berries. Be careful not to smash the berries; you want to keep them intact for a lovely texture.
- Pour the oatmeal mixture into a greased baking dish, spreading it evenly. Cover with plastic wrap or a lid, and place it in the refrigerator overnight.
- Preheat your oven to 350°F (175°C). Remove the oatmeal from the refrigerator and let it sit at room temperature for about 10 minutes. Bake for 30-35 minutes or until the top is golden brown and the oatmeal is set.
- Once baked, let it cool slightly before dusting with powdered sugar if desired. Serve warm, with a drizzle of cream, half and half, or additional milk poured over individual servings for added creaminess.
