Ingredients
  

  • 1 bunch kale chopped
  • 2 cups cabbage shredded
  • 1/2 red bell pepper thinly sliced
  • 1/2 small red onion thinly sliced
  • 1/4 cup peanuts chopped
  • 1/4 cup natural peanut butter
  • 1 lime juiced
  • 2 tablespoons soy sauce (lite, or tamari/coconut aminos for gluten-free)
  • 1 teaspoon honey
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon ginger grated

Method
 

  1. Start by washing the kale thoroughly. Remove the thick stems and chop the leaves into bite-sized pieces. Place the kale in a large mixing bowl.
  2. Add the shredded cabbage, thinly sliced red bell pepper, and red onion to the bowl with the kale. Toss the ingredients together to mix them evenly.
  3. In a separate small bowl, combine the natural peanut butter, lime juice, soy sauce, honey, toasted sesame oil, and grated ginger. Whisk until the mixture is smooth and well combined.
  4. Pour the dressing over the salad mixture. Using tongs or your hands, gently toss the salad until all the ingredients are coated in the dressing.
  5. Finally, sprinkle the chopped peanuts on top of the salad for added crunch and flavor. Give it one last gentle toss to incorporate.
  6. Serve the Pad Thai Kale Salad immediately, or let it sit for about 10 minutes to allow the flavors to meld together. Enjoy it as a refreshing side dish or a light main course!
