Step 1: Prepare the Fruit - Wash peaches, peel, remove pits, and chop into small pieces. Drain and chop pineapple if desired.
Step 2: Combine Fruit and Sugar - In a large mixing bowl, add diced peaches and pineapple. Sprinkle sugar over fruit and let sit for 10-15 minutes.
Step 3: Add Pectin - Sprinkle powdered pectin over fruit mixture and stir gently for 2-3 minutes until dissolved.
Step 4: Fill the Jars - Fill freezer-safe jars with the mixture, leaving ½ inch space at the top. Wipe rims to ensure a proper seal.
Step 5: Let the Jam Set - Cover jars and let sit at room temperature for at least 24 hours before freezing.
