Ingredients
  

For the Cookie Bars:
  • 1 cup Unsalted Butter melted
  • 2/3 cup Granulated Sugar
  • 1 cup Light Brown Sugar packed
  • 1 Large Egg
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Unsweetened Cocoa Powder use special dark for deeper color
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 1/2 cups All-Purpose Flour
  • 1 cup Chocolate Chips semi-sweet or milk
For the Peanut Butter Filling:
  • 1 cup Peanut Butter
  • 1 cup Powdered Sugar
  • 1 teaspoon Vanilla
  • 2 tablespoons Milk

Method
 

Cooking Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: Line an 8x8 inch baking pan with parchment paper.
  3. Step 3: In a large bowl, combine melted butter, granulated sugar, and brown sugar until creamy. Add egg and vanilla extract.
  4. Step 4: In another bowl, whisk together cocoa powder, baking soda, salt, and flour. Gradually add to wet ingredients and mix until combined.
  5. Step 5: Fold in chocolate chips into the dough.
  6. Step 6: In another bowl, mix peanut butter, powdered sugar, vanilla, and milk until smooth.
  7. Step 7: Spread half of the cookie dough in the pan, layer with peanut butter filling, and top with remaining dough.
  8. Step 8: Bake for 25-30 minutes until edges are set.
  9. Step 9: Cool in the pan for 10 minutes, then lift out and cool completely before slicing.

  • For a gluten-free version, use a gluten-free flour blend.
  • Store in an airtight container for up to 3 days at room temperature.
