Ingredients

For the Crust:
  • 1/2 cup cold butter cut into 1-inch chunks
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
For the Filling:
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup freshly-squeezed lemon juice
  • 1 1/2 teaspoons lemon zest
  • optional extra powdered sugar for dusting

Equipment

  • 9x9 inch Baking Pan
  • Mixing Bowls
  • Whisk
  • Measuring cups and spoons
  • Pastry Cutter
  • Juicer

Method

Directions:
  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a mixing bowl, combine the cold butter chunks, all-purpose flour, and powdered sugar. Mix until resembling coarse crumbs.
  3. Step 3: Transfer the crumb mixture into the prepared 9x9-inch baking pan and press firmly into an even layer. Bake for about 15 minutes, or until lightly golden.
  4. Step 4: While the crust is baking, whisk together the granulated sugar and eggs until smooth. Add the lemon juice and lemon zest, mixing until fully combined.
  5. Step 5: Once the crust is done, pour the lemon filling over the hot crust. Bake for an additional 20-25 minutes, until the filling is set and edges are slightly golden.
  6. Step 6: Allow the lemon bars to cool in the pan for at least 30 minutes. Dust with powdered sugar before slicing.
